I have a headless server with a GPU that has an S-Video out. I also have the following video capture device which can convert S-Video to USB,
http://www.amazon.com/ADS-Tech-USBAV-19 … B0009UDABW
When I plug it in and run lsusb, I see this line so I think this means Linux is detecting my device and should be able to use it.
Bus 001 Device 006: ID 06e1:a191 ADS Technologies, Inc. Instant VideoXpress
However, if I run ls /dev, I only see /dev/video and /dev/video0, and when I open either of those in VLC, both streams only show the output from my built-in webcam... Does anyone have any ideas why I am unable to see the video output from my ADS Tech USB video capture device? Thanks!

Hrm... no ideas? How about this - does anyone know of a Linux-friendly S-Video-to-USB video capture device?

If there is no answer means that nobody really knows about your problem. Thus remain patient and/or provide more information (on a new thread, that is).
