Hi,
Have a customer who would like a linux server in DMZ running any type of e-mail server with gray-listing.
Does anyone here have experience on how this works? If we must go for sendmail/postfix with another type of gray-listing software or if it is included within the software itself?
Would Arch be a good server to host it on? I know people often say enterprise distributions like Redhat and Suse but just want to hear your thoughts. I love Arch and like the rolling release model.
We will use two or three servers with DNS round robin to distribute the load and the redundancy.

Have you used greylisting before? I wouldn't recommend it since it almost doubles your system load since it's basically processing mail twice.
More traditional spam protection is the way to go.

I disagree. Greylisting is very cheap for your server (compared to e.g. spamassassin) but increases load on those servers who deliver mails to you. But if your mail senders don't change that often that wont matter.
