gnome shell - can't see well in nautilus, etc.

I cannot see the text in nautilus, gedit and other applications. I recently installed arch linux in place of Ubuntu and like Arch a lot more. How do you change the colour of the text in Gnome shell? I realise that it needs to be white for the activities dialog but I cannot read white on a white background ( like most normal people ).
