I was thinking since the erlang package is out of date and no one is going to upgrade it, i could upgrade it. And advice/best practices for upgrading packages?

It's still in the repos, so you can provide a PKGBUILD but not literally update it.

Posting an updated and confirmed to be working PKGBUILD to the arch-general mailing list might get a friendly dev to do the update in [extra] for you...
