Not sure where to post this.
Never seen anything like this before.
I have a few mount points created in /mnt. nfs mounts from other hosts.
If I cd into /mnt and list the contents I am presented with a list of the contents of / plus my mount points.
Not only that, but the directories I created in /mnt show when listing the contents of /.
Why? How do I make it not do that?

Please post the output of `mount` (or better yet, `findmnt`) and your fstab file. Has this persisted through a reboot?

Yes. It has persisted from shortly after creating the directories. (and apparently configuring fstab. Doh!)

With no entry for /
