Gnome 3 "Open With" without changing the default application.
Is there some way to do this? Every time I right click on a JPEG and choose "Open With" and choose Gimp, Gimp then opens every JPEG I double click on.

I wish I knew! I rarely use nautilus (I live from the command prompt and nautilus is getting more and more annoying to use), but in the last few days I have run into this a lot!
There is another thread about it here https://bbs.archlinux.org/viewtopic.php?id=200940 with no answer, so sadly I think it is time to switch to something else.
