unbound: DNS-over-TLS vs. root server

I have unbound installed on two laptops and they are configured to query the root servers.

What are the advantages / disadvantages of changing the /etc/unbound.conf file to forward DNS requests to DNS-over-TLS enabled servers (cloudflare, quad9)?

How much of a performance hit is there when forward via TLS? 

Is the added security worth it (i use vpn when away from home)?
