I have been using linux on my dual booted system along with windows for more than a year now. My windows is installed in UEFI mode and Linux is installed in Legacy mode. All was working fine and suddenly it stopped working so fine. I can't recall making any significant changes to my system last time I used linux. The important point to note here is that I can still just switch to UEFI and use windows.

I'd start by "why" and end with "just don't" - just install grub into the ESP, https://wiki.archlinux.org/title/GRUB#UEFI_systems
