I have the same exact problem described by user pontifikas.
here's the link to his solved post: https://bbs.archlinux.org/viewtopic.php?id=277166
I don't want to nekro/unsolve his post, from his post:
Scratch that.
I just uninstalled the plasma-kde packages (decided to stay with gnome) and the problem is no more. I have no idea why, since the problem was manifesting on both kde and gnome.
The problem is that i never installed or used plasma-kde, something else must be the solution to the problem, I'm quite sure I used the package gnome-settings from AUR in the past as he did, maybe that could be the root of the problem but I don't know for sure, it's only an hypothesis.
Let me know if you need some logs or configs to help.
Thank you
Edit:
I also noticed that even if I hear sound, the system volume slider is not working, and on gnome Settings/Sounds Input devices are greyed out, and disabled.
Re-edit:
The master volume slider now works but only if i refresh the gnome Settings window.

Uninstalling wireplumber and moving back to pipewire-media-session solved the problem, thank you.
