Is there a way to force pacman to install packages even though they're of the "wrong" architecture? For instance, I want to install wine, but I have Arch64. I know wine's in AUR, but I'd rather get the official one.

That will not work at all. An 'architecture' is your machine and it's hardware. What you are asking is, in essence, "How do I use ATI's drivers for my Nvidia card?"
