Do you have php installed? and make sure the LoadModule for php is NOT commented out in /etc/httpd/conf/httpd.conf :
LoadModule php5_module modules/libphp5.so
FaunOS: Live USB/DVD Linux Distro: http://www.faunos.com

If you don't want to mess with configuration, you can give a try to a program I have made. It installs Apache, MySQL, PHP, PHPMyAdmin and Joomla! and configures it all. There are a couple of versions (stable and beta), and the installer is Windows-like (next, next, next ) and you don't need root permissions.
The link is http://www.bitnami.org/stacks/joomla
Any feedback is appreciated
