I was wondering if there is a way I can change or add more mouse themes to my system. I installed Gnome/GDM however the mouse theme looks very dated and is hard to use. I saw Ubuntu with Gnome 2.24 and it looked amazing. I am using Gnome 2.24 on Arch however it appears I am missing something. Do I need gnome-utils?

The last time I used Ubuntu, the default cursors were the Vanilla-DMZ cursor theme.
pacman -S xcursor-vanilla-dmz
Then throw this in your ~/.Xdefaults file.
Xcursor.theme: Vanilla-DMZ

P.S. Vanilla-DMZ is the white version. There is also a black version named Vanilla-DMZ-aa

Note, if you want this in your GDM, you need to move the contents of /usr/share/icons/Vanilla-DMZ to /usr/share/icons/default. GDM always picks the default, so there ya go.
Also, if using Gnome then you don't need that in your .Xdefaults. You can manage it through the Appearance config.

Thanks Redroar. I've been using Openbox so long I guess my Gnome-Fu has developed a slow leak
