Why do I need to secure the root folder that way? If not, accessing the IP can access the vhost.

It depends on what you want to do with the site.
How about cgi stuff?
You will be tweaking your apache config constantly initially, since you may require to have authentication as well as url-rewrite for your site.
Both will require changes to Option and AllowOverride.
