I'm using an Dell Inspiron 8600 with an Nvidia 5200Go graphics card. I'm using nouvea drivers with mesa and nouvea-dri packages installed. Gnome works well, and is fully functional, the issue is with the graphics. They look like this:
The top bar is transparent, and some icons and text characters are missing. Icons will appear if I mouse over them.
If this issue can be solved that would be great, alternatively I would like to know how I can force Gnome 3 fallback mode on Arch so that I can boot into fallback mode every time.

You can force fallback mode from the system settings, don't know from the top of my head where exactly. This seems like a nouveau problem though; It's not really suitable for compositing (yet) if you ask me.

I actaully fixed the font issue by using gnome-tweak-tool to remove hinting from the fonts. However, the bar at the top is still not black.
And Cilph, I looked for the fallback mode setting because I knew where it was in Fedora, but Arch doesn't seem to have the same setting.

Here I'm experiencing issues too with GNOME 3 and nouveau, in windows when I tried to search something, switch wireless networks it used to chrashed but I remove all Qt related apps, and those issues vanished, for now.
Now the only problem I'm having is when a run any of my LÖVE games it just shows me a black screen with nouveau related messages and I does not chrash Xorg and I can not switch to any tty.
I suspect that nouveau can't deliver all graphics capabilities need by GNOME 3, but still I am not going to switch to Nvidia.

You can set fallback mode:
gnome-control-center
Select Graphics option on the left side and switch to On.
