I was compiling a custom kernel using ABS and i noticed that i only had the packages: linux-3.11.tar.xz and patch-3.11.6.xz.
Don't we have to apply the earlier patches: 3.11.1, 3.11.2, 3.11.3, 3.11.4 and 3.11.5 too?

No, you just apply the patchset for the version you want to build.

I read this:
"Patching the kernel is a good choice if you wish to upgrade from your current patch level to the next consecutive patch level. For example, patching kernel 2.2.5 to 2.2.6 involves applying one patch.
