Not sure where I have gone wrong, but any package I try to install via AUR on a clean installation is returning the following:
curl: (22) The requested URL returned error: 404 Not Found
I have generated the mirror list using reflector:

Then ran pacman -Syyu
Example package is jdk8 (required for work). I have tried to install via pamac, yay and manually with makepkg -si
I figure I have probably messed something up during installation, but I am unsure where to start looking.

Think the issue is me not reading the comments for that specific package:
Direct downloads are no longer available. Create your Oracle account, download, and put in with the PKGBUILD.

Your mirrorlist isn't relevant for installing AUR packages. Please post the complete makepkg command and output that you are seeing.
