I swear this was working before upgrading to 5.8, but downgrading to 5.7 didn't seem to solve the issue. Internal audio's working fine but I can't seem to get audio working through headphones when they're plugged in. I've made sure that it's not muted through alsamixer. I can also see that the headphones are detected in both alsamixer and pavucontrol but no audio. Any help would be much appreciated.

USB or jack headphones? What model it is? Can you paste some screenshots from pavucontrol? Have you read:

From another Linux site (Ubuntu):
pulseaudio -k && sudo alsa force-reload
The first part kills pulseaudio, the second reloads ALSA. No need to restart pulseaudio, because it auto-restarts. There's also statement that sometimes you might need to clear pulse config with rm -R ~/.pulse.

There was a commit introduced in 5.7.10 that changed ASUS default headphone model to headset mode with microphone.
To use headphones without microphone you need to change the HD-Audio Codec-Specific model.
See Correctly detect microphone plugged in a 4-pin 3.5mm (TRRS) jack
Create /etc/modprobe.d/alsa-base.conf with:
options snd_hda_intel index=0 model=headset-mode-no-hp-mic
You may need to fully power off your computer for the change to take effect.
