What is the difference between a -git and non -git repository?

For example, I'm trying to install a program and it's asking me which provider I want to download from, programName, or programName-git. What's the difference?

It??  The program you haven't yet installed is asking you something?  I doubt it.

Facetiousness aside, context makes it clear that the "it" here may be pacman, or makepkg, or some wrapper tool; but which one?  The answer matters.

I doubt this description is accurate.  Are you sure it's not asking which package you want to install to satisfy a dependency?  You are not downloading from these, but you may be prompted to (download and) install one or the other of these from the AUR.

Overall, if you phrased the question precisely, you'd get a much more useful answer - and more often than not, taking the time to phrase your question precisely will help you see the answer even before you post.  Then of course, there's also this.

git packages are built from the latest commit in their git repositories.
