I've tried to set it to never in the Gnome Settings, but once I close the window and open it again, it becomes 5 minutes again.

There is a bug with control center

For the time being, you can disable it with:
gsettings set org.gnome.desktop.session idle-delay 0Or set it to a longer period
gsettings set org.gnome.desktop.session idle-delay TIME_IN_SECONDSOffline
