I smartly remoevd pavucontrol from the Status Tray, and cannot add it again. I don't know, how to do it, and net didn't help me.

You could try deleting the contents of ~/.config/xfce4/panel/, that should restore it to the stock configuration.
Alternatively, it looks like Xfce has a configuration GUI for the systray that can add and hide applications: https://docs.xfce.org/xfce/xfce4-panel/systray ← have you tried that?

I tried at first that app, but it has nothing allow me to add anything.

If the problem is simply to add pavucontrol to the XFCE4 panel, then the answer is to right-click on a free space on the panel, and Choose "Panel" and "Add New Items..." in the menus that pops up. The Item to add is "PulseAudio Plugin". In the PulseAudio Plugin configuration pavucontrol should be the Audio Mixer:

pavucontrol is afaik not showing anything in syspanel. xfce4-pulseaudio-plugin is the systray plugin needed.
