how do i refresh icons/add custom icon for specific app

i got gnome with some extensions and an icon pack but every time flatpak updates my packages it resets the Icon=(icon name) in the .desktop file and i need to change it each time and i got used to changing the .desktop file each time but what i find more annoying is the fact that i need to log out and log back in each time to see the icon working
also if anyone knows how to add a custom icon to a specific name that would be even nicer.

Copy the system-wide desktop file from /usr/share/applications to your $HOME/.local/share/applications and edit as you see fit.
The personal desktop file will take precedence over the system-wide desktop file, and not be overwritten when you update.

You can create your own .desktop file see https://wiki.archlinux.org/title/desktop_entries
Otherwise you can change the default images by replacing them with your costume image, these images are stored in /usr/share/applications
