So the system does up to (at least) ~200Mbps on the LAN (and from previous tests ~80Mbps on the WAN, in line w/ your internet plan) which is ok-ish for a 802.11n connection (I guess the laptops aren't on a wired connection?)

Wrt the previous

Some speed tests I ran gave 0.00 Mbps. Some give 10 Mbps, as you saw

The iperf results are very consistent, a margin of a ~1 mbps differences, so nothing weird there. Should I try to run a couple speedtest while I'm running a couple if iperfs and post all of them?

You can, but the implication is that this is a WAN issue.
Maybe the router. Did you at any point reboot the latter to try to remedy this?

Oh wait, this is an instance of my internet working at full speed. It's probably gone again after a while...

EDIT: actually, it's continuing to be good for suspiciously long. I guess restarting the router fixed it. I'll update the thread if it comes back again, but for now, it's fixed. Thanks for the support!!

Interestingly, this specific speed test gives fast results, despite all my apps working very badly.

I've noticed early that it seems to be an issue with FINDING servers.
Youtube video's load perfectly once the website is loaded, discord calls continue to go perfectly once I have connected successfully once and games continue to play perfectly once connected to a game after it starts to slow down randomly somewhere after boot.
I know I am being a bit vague there, but I wouldn't really know how to benchmark such things.

You're not using resolved, your router acts as your DNS server (and is likely a hub for your ISPs DNS, caching or maybe not)
The resopnse time for google.com is very good, but that might be a one-off

Now let's try cloudflare:

Use 1.1.1.1 (8.8.8.8 is google) and see whether that has impact on your WAN performance.

I tried to make make my /etc/NetworkManager/conf.d/dns-servers.conf:

[global-dns-domain-*]
servers=::1,127.0.0.1,1.1.1.1

I restarted NetworkManager with:

systemctl restart NetworkManager

I then rebooted, and it has been working like a charm since. I don't know how soon that will change, though. I will keep your updated.

As long as there's no local dns server (like dnsmasq or resolved) you can skip "::1,127.0.0.1"
Check your router config on which DNS server it uses as source (and whether you can change that) - the other systems in the LAN might use local caches, but they'd still be impacted by a slow global DNS.
So if the problem isn't w/ the router but the configured (ISP?) DNS, altering the DNS in the router config might provide wider benefits.
