Sometimes my peripherals turn off (Mouse/Keyboard, etc) after GRUB. It doesn't happen all the time, but it's enough of an issue to concern me. It has followed me for quite some time, over fresh new installs of Arch.
I am unsure if I have simply misconfigured something to make the system unstable or if its related to hardware. Unfortunately, at the time of writing this, everything is working as it should be. It's impossible to use the physical keyboard or mouse when it does happen, so it makes troubleshooting that much more difficult.
Any idea how I could get some information about this or what could be the cause?

try checking your cables first, and try other mice and keyboards to see if that fixes your issue when it occurs
if it doesn't fix it, try checking "journalctl -b" and post the output to see if there is any issue there

If you've a second system you could ssh into the bugged one, otherwise re-connecting them might help.
