Check/post your pacman log on what was actually updated.
Does it still work with the LTS kernel?
Does it show up when booting a live distro like eg. grml?
Do you expect it to be on DP or HDMI?

Remove the static server config, it won't help w/ the output but at least you're not enforcing a config then either.

I removed the /etc/X11/xorg.conf
I replugged the monitor but I don't see anything in /var/log/Xorg.0.log. I don't see anything in dmesg output as well on replugging.

I suspect it to be coincidental, the updates don't look like they could to anything and HDCP is time-ciritical and esp. in HDMI notoriously fragile.
Keep an eye on it and if you've the opportunity to change HW (connection, cable, monitor) see whether that has any influence.
