If I open ports at my home server to remotely mount some folders at a friend's house over the internet, am I diving into a lot of security risks? What is the proper way to set this up so only I can access this share? Or what's a better way to do this?

I'm pretty sure that this is a bad idea. NFS isn't really know for its security I think.
I'd use an SSH server with sshfs.

sshfs is good, as suggested. If you really want nfs, you can secure it with ssh - google for the details. Better still, run it inside a vpn.

Heh, my solution to this sort of problem was to create a Hamachi network with a very secure password and run SSH over that...
