To keep it short, I modified my xorg.conf and when the gdm screen appears neither my mouse nor keyboard works....how can I prevent GDM from loading on boot when I can't even get logged in in order to fix the problem?

When your grub selection appears just hit the "e" key for edit and add single to the end of the kernel line. That will let you log in as root and you can change or eliminate your login manager from there.
