I've been unable to find a simple GUI for editing the Gnome 3 Application Menu entries, so I made one.
Is there any interest in this (making it into a package, etc), or is there some preferred utility out there that I just haven't found yet?

If it is a script, you can post it under community contributions subforum. If it is more complex, you can create a PKGBUILD for it and submit it to the AUR. Then let us know about in the community contributions subforum.

You can install alacarte, the old gnome menu editor, it still works: http://aur.archlinux.org/packages.php?ID=50089

Here's a screenshot. It's been a while, so hopefully this isn't going to be come a zombie of a thread. I made some tiny improvements to the program. It's still not very usable as far as good programs go, but it gets the job done. Link to GitHub page in above comments.
