im just trying to get an idea of different options for a mail server. anyone have any suggestions?

I suggest you run an MTA. I hear those are handy.

I'm running a qmail server at the moment with vpopmail as per http://www.qmailrocks.org
I used that tut a while back to build a corporate server over Fedora and was quite happy with it... However, I had a bit more trouble (both setting up and ongoing) on Arch, and will eventually change to Postfix I think.
One of my ongoing problems is that it create 6 zombie processes that I can not ge rid of. If I kill the parent processes, it kills the zombie, but when the parents are restarted, it creates another 6 new zombies.
